Sambamaki is the best expression of Japanese-Brazilian food fusion. The cuisine becomes art through the use of ancient traditional Japanese techniques and the explosion of colours and typical flavours of Brazilian food culture. Sambamaki is an idea of Ricardo Takamitsu, the most famous sushi chef in Italy and Riccardo Di Salvo his co-founder.
Ricardo Takamitsu, born to Japanese mother and Brazilian father, began his career at the age of 22 at Nakombi, one of the most renowned restaurants in San Paolo. Later he moved to Tokyo, to enhance his technique and then to Italy, where he became one of the best sushi man in Europe, hosted in one of the most famous cooking shows. "Samba Academy", a sushi school to train the best sushi chefs in Italy, is one of his future projects.
